DUTIES AND RESPONSIBILITIES

• Prepares menu items from scratch ingredients and adjusts recipes to volume of demand

• Prepares food for special diets

• Reviews prepared menu items to ensure proper cooking, ensures successful and timely execution of the menu

• Assists in review of menus and recipes with Manager

• Assists with the inventory and maintenance of supplies and goods for assigned meals

• Ensures the proper storage and labeling of leftover ingredients and products; assists in their utilization to reduce waste and food cost; rotates stock

• Operates cooking and kitchen equipment

• Identifies equipment malfunctions and safety issues to the Manager

• Oversees and participates in cleaning and sanitizing of kitchen area; washes utensils and equipment; checks and stores food and kitchen supplies; keeps simple records

• Directs food service workers, providing instruction, assigning and checking work, delegating tasks as needed

• Perform all responsibilities to standards of Washington State health code

• Frequently need to lift items, boxes, products from floor to low shelving or counters. Also need to place items on low shelving for preparing or cooking food.

• Performs other work as required.

MINIMUM REQUIREMENTS

Possession of, or eligible to obtain a Washington State Food Worker card within two weeks of employment AND one year of experience performing skilled cooking duties; or equivalent education/experience.
