Job Summary Under the general direction of the Director of Culinary Operations Director/Executive Chef for Dining Services, the Assistant Director of Culinary Operations is responsible for providing operational support to the Dining Services culinary team and culinary operational areas. Involves managing all administrative services for menu and recipe development and culinary operational oversight of the Dining Services operation for SHDS. Administrative services include activities in finance, human resources, I.T., dining logistics, procurement, and accounting processes. General management activities include long and short-range strategic planning in determining, and upholding operational standards, ensuring the envisioned programmatic outcome is achieved. This includes the management of staff and administrative systems supporting all units in the Dining Services portfolio: Retail Restaurants, Coffee Shops and Markets, Residential Dining Commons, and Catering and Concessions operations.

The Assistant Director of Culinary Operations provides support of to the Culinary Operations team and is responsible for supporting recipe development, menus planning, plate cost calculations, production standards, cooking procedures for day-to-day culinary operations. Utilizing the Menu Management System (Jamix), leads the culinary team to develop and cost out menus and recipes for residential and retail dining units, the commissary production facility, and catering operations. This position works with the dining logistic and inventory management team to ensure delivery of supplies, equipment, food supplies and other department assets services to all dining locations. This position is responsible for financial accountability to systems and processes including accurate data entry, ordering, inventory management, appropriate product utilization, as well as managing vendor relationships and support. Oversees menu development process, including inventory management, food costing, modifications, following timelines, and using industry production methods. Assists with developing menu cycles for dining operations by developing, testing, and refining innovated recipes that meet budget expectations. Responsible for providing quality dining experience, by establishing high standards for production of food and excellent guest service through innovative, diverse, and creative menus. Establish performance goals and conduct performance appraisals for career and student staff both directly and indirectly supervised.

Qualifications

Minimum Qualifications

  • Culinary experience in the dining services and/or hospitality field, including by not limited to menu development, catering, food production, handling and storage, quality control, health, and safety.
  • Experience in managing food preparation, culinary trends, vegetarian, vegan, nutrition, special dietary needs, allergy awareness and sanitation regulations.
  • Experience working independently to initiate and innovate new programs, menu development, and operational change.
  • Experience with computer-based systems to administer and manage food service, including but not limited to production, purchasing, forecasting, menus, labor scheduling and management, financial reports, and meal plan control.
  • Management experience to recruit, interview, hire, supervise, and evaluate staff to meet performance goals.
  • Skills and ability to work cooperatively in individual, group, and formal settings, and to interact effectively with diverse communities, university staff, and students.
  • Skill to write concise, logical, and grammatically correct operational / administrative related reports or correspondence, including but not limited to recipes, schedules, procedures, employee performance evaluations, and reports. Coordinate projects and services with central campus units, outside vendors and internal customers to conduct effective planning, training, negotiations, problem solving and dispute resolution.
Preferred Qualifications
  • Experience working with a Food Management software.
  • Experience in budget preparation and fiscal management to successfully administer a budget.
  • Knowledge of campus infrastructure, purchasing protocols and financial protocols.
  • Skill to use database management systems to retrieve information, analyze it and form reports.
