Job Duties

Performs a variety of supervisory functions for patient meal service, special activities, catering and employee cafeteria. Provides direct supervision of production and service personnel to assure timely, accurate food production, delivery and service of patient and cafeteria meals in a cost effective manner. Maintains required sanitation and quality control standards within the strict guidelines for wholesome and quality food production, serving and storage established by state and local regulations, standards set forth by TJC and HACCP guidelines.

Hours for this position will be 10:30 a.m. - 7:00 p.m. Some weekend work required.

Minimum Qualifications

Knowledge of quality food production and service procedures. Knowledge of sanitation requirements and procedures. Ability to read, comprehend and carry-out and give written and verbal instructions. Capacity to learn and understand therapeutic diets. Ability to develop work schedules and task assignments. Ability to supervise, direct, motivate, evaluate and counsel food service personnel. Ability to teach and train food service personnel to improve skill levels and productivity of food service staff. Ability to stand for extended periods, lift moderate (10-40 lbs.) loads, bend, stoop and carry objects. Capacity to work in high heat, high humidity environment. Aptitude to work as a contributing team member. Ability to work in a secure and locked environment with individuals who are experiencing acute symptoms of mental illness and/or additional forensic/legal involvement.

Additional Considerations

Sufficient education or training that the incumbent can demonstrate ability to read and comprehend written menus, recipes, policies, procedures and other instructions.

Prior experience in a commercial or institutional facility as a cook or supervisor.

CDM Certification experience and education will be considered.
