The Junior Sous Chef assists the Chef de Cuisine in supervising and coordinating the preparation of food according to standards set by Spruce Peak and the Chef de Cuisine. In addition, the Junior Sous Chef, provides sincere service through actions that display self-confidence, grace and courtesy to guests and colleagues.

Essential Functions:

• Assists in developing and implementing strategies for the Kitchen that support the achievement of Spruce Peak goals

• Assists in conducting periodic food inventories

• Initiates and oversees ordering of food and kitchen supplies

• Orders all supplies from various vendors and in some cases going directly to the growers for the freshest possible products

• Ensures all cuisine served to guests follow established guidelines for quantity, quality, appearance, and palatability

• Supervises and coordinates the production of food according to menu specifications

• May perform Sous Chef, Chef de Cuisine, or Cook duties as needed

• Responsible for inventories, purchasing, and scheduling

• Communicates effectively with the Kitchen Staff and the Stewarding Team

• Orients employees to the department and resort and provides on-the-job training on job responsibilities

• Upholds all safety standards of Spruce Peak

• 3-5 years cooking experience in a high-volume fine dining restaurant

• Ability to handle food, objects, products and utensils

• Ability to bend, stoop and kneel

• Experience in high volume establishments

• Excellent communication skills

• Technical proficiency (computer applications)
