Primary Purpose:
The Kitchen Manager is responsible for the supervision, training, and management of the campus child nutrition staff, operation, and financial accountability. The kitchen manager ensures that appropriate quantities of food are prepared and served. The kitchen manager maintains compliance with local, state, and federal regulations including public health and safety.

Duties/Responsibilities:
  • Manage day-to-day operations within the kitchen, adhering to Child Nutrition program (CNP) guidelines which includes:
    • Directs, manages, and cross train kitchen staffs
    • Produces work schedules and manages employee absences
    • Manages personnel issues, (including but not limited to daily coaching, conflict resolution, hiring and termination)
    • Supervises storage of all food and supplies in the kitchen
    • Ensures adherence to State Safety and Sanitation guidelines
    • Monitors working condition of appropriate kitchen equipment
    • Report work-related injuries to Operations Director and Talent Management in a timely manner
    • Coordinates, and document required monthly safety training with the kitchen staffs
    • Ensures that staff adhere to all standardized recipes on a continual basis
    • Ensures high standard of food quality through continual monitoring of staff during production and service
  • Manages production, order, and inventory:
    • Responsible for data entry of planned production and the actual amount served in Titan Menu Planning System (based on completed production records)
    • Responsible for ensuring the proper counting and claiming process is followed
    • Responsible to monitor portion control to ensure compliance with USDA/TDA meal patterns
    • Responsible for determining the level of inventory needed for production, adhering to inventory management process
    • Responsible for conducting weekly and physical inventory and maintaining perpetual inventory
    • Responsible for maintaining inventory records in Titan Perpetual Inventory System
    • Accountable for placing accurate order for production
  • Responsible for gas credit card reconciliations documentation submit in a timely matter to appropriate CMO personnel
  • Responsible for campus based CNP profit and loss
    • Implement effective cost control in the kitchen. This includes but is not limited to:
      • Effective inventory management
      • Food waste management
      • Control and continual monitoring of possible internal and external theft
    • Monitors food production and waste
    • Perform End of Day reconciliation with each cashier which includes:
      • Daily Cash drawer reconciliation
      • Daily A la Carte sales and inventory reconciliation
      • Adheres to standard accounting operating processes for cash handling
    • Oversees student/staff lunch account balances
  • Oversees Free and Reduced Lunch applications to ensure that paper lunch applications are submitted to the appropriate CNP personnel for processing in a timely manner
  • Works with Operations Directors to coordinate meals for field trips and testing
  • When necessary, makes day-to-day food substitutions, adhering to USDA/TDA regulations
  • Provide Director with input on kitchen staff hiring/termination decisions
  • Provides Field Operations Director with input on menu and food preparation methods
  • Attend required trainings
  • Assists with other kitchen tasks as needed including but not limited to delivering, cooking, cleaning, servings etc.
  • Establishes and maintains a positive relationship and a continual open line of communication with all Uplift staffs and parents
  • Other duties as assigned by supervisor

Education, Experience, and/or Certification(s):
  • Education Requirements: High School diploma or general education diploma (GED) preferred; may substitute equivalent work experience for diploma preference.
  • Experience Requirements: 2 years experience in school food service/food service including cooking, production, inventory, and personnel management.
  • Special Skills/Certifications: Must Possess current Servsafe Kitchen Manager's Certification before employment (or the ability to obtain within the first 20 days of hire), Ability to understand food preparation and safety instructions. Knowledge of kitchen equipment and food production procedures. Capable of operating small and large kitchen equipment and tools.
Required Skills/Abilities:
  • Communication Skills: Ability to communicate with all levels of personnel, students, and parents.
  • Bi-lingual Skills: Ability to read, analyze, and apply understand and to carry out instructions in written or oral English.
  • Technology: To perform this job successfully, an individual should be proficient in Microsoft Office applications (Excel, PowerPoint, Word, and Outlook) and use software as necessary (POS, clock in and out etc.). Ability to use basic office equipment. Ability to perform basic arithmetic operations.

  • Child Nutrition workers are regularly required to stand and walk for the entire shift.
  • Required to reach, balance, stoop, kneel, twist and bend often
  • Employee must be able to lift and/or move up to 40 pounds
  • Frequently exposed to moving mechanical parts
  • Occasional exposure to fumes or airborne particles; extreme cold and extreme heat

Work Environment:
The work environment is representative of those an employee encounters while performing the essential functions of this job. The environment requires proximity to other employees, frequent interruptions, extended periods of time viewing a computer screen and standing, and noise levels from moderate to high. There may be activity from other employees and students of a distracting nature.
