Job Description

Purpose of Position Under the direction and supervision of a Food Service Supervisor/ Management, performs all duties as assigned.

Specific Responsibilities:
• Check work assignment
• Follows "First in-First Out" (FIFO) methods for stocking
• Obtains stock from refrigerators and storerooms, loads and unloads stock, and dispatches and stores supplies.
• Labels food items, using dates and names of products
• Removes food from non-functioning refrigerators
• Prepares and/or pre-portions food items for tray line service in accordance with menu.
• Operates all kitchen equipment in a safe manner
• Checks menu cards, special and/or modified diet lists to determine types and quantities of foods to be prepared in accordance with standard procedures.
• Prepares or supervises the washing, trimming, cooking and seasoning of all food items.
• Utilizes a variety of kitchen utensils and equipment such as blenders, mixers, grinders, slicers and tenderizers in the preparation and cooking of foods.
• Prepares food utilizing such equipment as steam kettles, grills and ovens. Maintains correct temperatures for all foods.
• Tastes foods for consistency and seasoning and corrects as necessary to assure proper flavor and texture.
• Apportions servings and prepares or directs the preparation and distribution of food to serving areas in accordance with departmental standards.
• Inspects foods in work and storage areas for compliance with storage, safety and sanitary standards.
• Instructs and supervises all dietary aides/other cooks assigned to unit and assists in orientation and in-service training programs.
• Cooks live cooking demo in resident café or food resident events in the kitchen
• Participates in daily menu conferences and confers with Supervisor concerning menus, food preparation, quality recipes, use of leftovers and related matters.
• Assists and prepares resident/patients between meal nourishments and cold foods (salads, sandwiches, desserts etc.)
• Follows infection control guidelines for hand washing and cross contamination.
• Cleans kitchen and dining area. Washes, sanitizes and or sterilized dishes, working areas/surfaces, utensils and equipment.
• Ensure all food is prepped and prepared in accordance with established policies and procedures to be completed within a reasonable established time schedule.
• Notify Management of any quality concerns with any food product used.
• Answers phones in a professional manner
• Participates in departmental and hospital in-services
• Performs other related duties and responsibilities as required or instructed by Supervisor or Manager

Performance Requirement:

Responsible for the sanitary and safe handling of food and equipment. Must adhere to mealtime and schedule.

PHYSICAL DEMANDS:

Extensively stands and walks most of the day. Stoops, reaches, lift carriers, pulls, pushes. Must be able to lift , push and pull a minimum of 25 lbs. Handles utensils with speed and dexterity.

Minimum Qualifications
1. Elementary school graduation through the eighth grade, plus a formal course in basic cooking principles, and a New York City Department of Health Food Protection Course Certificate; and,
2. Three years full-time, paid experience as a cook in a health care or large institution, experience with large scale institutional cooking procedures, use of standard quantity recipes and portion control, ability to read and write English and perform simple arithmetic functions, leadership skills and ability to communicate and to supervise; or,
3. A satisfactory equivalent combination of education, experience and training.
