Patton State Hospital, Human Resources Department, is accepting applications for at least one (1) Permanent, Full-Time, Supervising Cook I position. The vacancies exist in the Nutrition Services Department and are under the direction of the Food Manager.

The Supervising Cook I will be directed by the Food Manager in the Nutrition Services Department. The Supervising Cook I is responsible for supervising and giving instruction and training to employees, evaluating employee performance, supervising the maintenance of culinary utensils and equipment, ensuring that standards of safety and sanitation are being followed, performing daily kitchen inspections, ensuring that proper food handling practices and standards are being followed, and planning menu in accordance with the established food allowance to determine amount of food to be prepared. The Supervising Cook I can also serve as a lead cook on a shift and can act as Food Manager in his/her absence. Other duties and responsibilities include but are not limited to:

PRODUCTION: Responsible for the preparation and serving of food for all patient residents, the accuracy of requisitioning supplies from the warehouse, the accurate calculation and adjustment of all recipes, preparation and delivery of all special function meals, and assisting the production staff as needed.

PERSONNEL MANAGEMENT: Responsible for monitoring the daily production staff for attendance and performance, organizing the work production assignment sheet, maintaining daily cleaning schedules, and maintaining proper monitoring forms for all kitchen equipment. The Supervising Cook I is also responsible for conducting personnel evaluations for employees and completing incident reports as needed.

INTERPERSONAL WORK RELATIONSHIP: Expected to maintain open communications with all departmental staff, including all unit cafeteria staff as needed. The Supervising Cook I is expected to attend and conduct meetings and in-service trainings and to also provide a leadership role in quality improvement.

Must be knowledgeable in the principles, procedures, and equipment used in the storage, care, preparation, cooking, dispensing, and serving food in large quantities. Must have the ability to plan palatable and adequate menus, direct the work of others, keep inventories, determine food quantities necessary for groups of varying size, analyze situations and take effective action, and contribute to the department's equal opportunity objectives.

Working Conditions

Patton is a forensic psychiatric hospital and was established in 1890 and opened in 1893. DSH-Patton provides treatment to forensically and civilly committed patients within a secure treatment area. The hospital does not accept voluntary admissions.
