The Daytona Tortugas are currently accepting applications for a Assistant Food and Beverage Manager. The Tortugas take pride in being a leader of attendance in the Florida State League and locally being a strong community partner. The Tortugas are located in Downtown Daytona Beach, FL and are the Class-A Affiliate of the Cincinnati Reds. The ideal candidate is someone with the ability to build on our record-setting food and beverage operation.

SUMMARY: Responsible for coordinating multiple kitchen menus with product, staffing, and cleanliness. Ensures the high standards of food and beverage services for staff and guests. Collaborates with menu changes, presentation, and special requirements. Facilitates a cohesive environment, integrating all aspects of operations. Hires, trains, and supervises subordinates, working closely with the Food and Beverage Director and General Manager.

ESSENTIAL DUTIES:
  • Oversees all catering and event operations, ensuring execution from planning to completion.
  • Inspects all dining and event venues for correct appearance, cleanliness, and safety of areas, equipment, and fixtures.
  • Supervises Food and Beverage staff to meet or exceed standards for all events.
  • Manages all aspects of catering events, including logistics, setup, service, and breakdown.
  • Receives and resolves any conflicts or complaints from guests regarding their experience.
  • Understands and meets financial metrics for successful food and beverage operations.
  • Creates employee schedules for food and beverage personnel based on event forecasts, available to employees each Thursday before game week.
  • Develops and implements consistent onboarding and training programs for all food and beverage personnel, including SafeServ training.
  • Updates the Point of Sale system as needed and utilizes data for reporting purposes.
  • Basic computer skills required, including proficiency in Word, Excel, and PowerPoint.
  • Receive and Order products from multiple vendors and ensure quality.
  • Able to execute cash disbursement to various concession stands as well as balancing cash receipts at the end of shifts.
  • Must be able to work opening and closing shifts as scheduled. Most shifts will blend into each other on game days.
  • Must be Serve Safe certified in Food Manager as well as Liquor or be willing to provide within the first two weeks of employment.
  • Non-game day duties include cleaning, organizing, and other duties such as painting, polishing, repairing and moving equipment.
  • This position will include being on your feet for extended periods of time as well as working outside for extended periods of time.
