QUALIFICATION STANDARDS:

1. Knowledge, Skills and Abilities: Must demonstrate ability to plan, organize, develop and direct the overall operation of the Dietary Department in accordance with current federal, state, and local standards, guidelines and regulations governing the Facility. Must assure that quality nutritional services are provided on a daily basis and that the Dietary Department is maintained in a clean, safe, and sanitary manner.

2. Education: Bachelor of Science Degree in Dietetics or Foods and Nutrition.

Continuing education to meet requirements for registration as set forth by the American Dietetic Association (15 hours per year) and to meet state licensure requirements.

3. Experience: Recommended two (2) years' experience as a professional Dietician in long term care with some administrative responsibility, or one (1) year of experience as a registered consulting Dietician to one or more long term care facilities.

4. Certificate/Licenses

- Must maintain an active state license and membership in the State Dietetic Association and District Dietetic Association.

- Must maintain an active membership and registration in the American Dietetic Association.

JOB DESCRIPTION

1. Assist in the planning, developing, organizing, implementing and evaluating the Dietary Department.

2. Adjust menus to Facility preferences in compliance with applicable regulations.

3. Maintain recipes for all menu items.

4. Maintain standards of performance for the Dietary Department operation. Ensure preparation of menu items in compliance with OBRA and Title 22 regulations and with therapeutic diet orders..

5. Interact with other departments to ensure safe and superior food service, delivery, and nutritional care of residents.

6. Ensure food service work areas including food storage rooms, preparation areas, etc. are maintained in a clean and sanitary manner.

7. Assist the Infection Control Coordinator in identifying, evaluation, and classifying routine job related food service functions to ensure that tasks involving potential exposure to blood/body fluids are properly identified and recorded.

8. Assist in visiting residents upon admission and routinely to obtain food preferences, determine nutritional needs, plan of care, and minimize nutritional complications.

9. Reviews residents' labs, intake and output, weekly weights when ordered. Follows up on changes in residents' condition, medication changes, falls, and abnormal labs. Completes quarterly, annual, and significant change MDS assessments.

10. Reviews therapeutic and regular diet plans and menus to assure compliance with physician's orders.

11. Maintain timely resident charting per regulations.

12. Assist in the discharge planning process in regard to the resident's dietary services.

13. Participate in the Facility's annual DOH survey, including developing and implementing plans of corrections for any noted deficiencies in the Dietary Department.

14. Attend Resident Care Conferences and other meetings as necessary.

15. Serve on various committees as required such as, but not limited to, Quality Assurance.
